Enchiladas


After a hectic weekend  & a long day at work, I just could not get myself to plan a full dinner.  We end up with lots of leftovers from the weekend also.  So dinner was recycling these.

Looking inside the fridge I found some leftover rice and chicken tikkas.  Chicken Tikka pulao would have not been enough to go around or satisfy the kids.  Butter Chicken has been done to death, So I decided to make Enchiladas using this as the filling.

The sauce was a simple one made with tomatoes and puree.




The chicken tikkas had been picked up pre-roasted so all that had to be done was to shred it and mix.  No marinating and roasting required.  Needless to say this was a big success with all. 








Recipe follows but the filling is very versatile.  Anything could be added - baked beans, paneer, vegetables, mince meat
